This is a soup for the soul. Easy, nourishing and delicious. One for the whole family to enjoy.
- 1 red onion
- 2 sweet potatoes
- 1/2 butternut squash
- 2 cloves garlic
- 100g red lentils
- 1 can coconut milk
- 600g water
Place all chopped ingredients in a pan, bring to the boil, simmer for 25-30 minutes. Blend until smooth. Serve with life changing loaf and homemade hummus.
