• 1 sliced onion
  • 1 inch ginger finely sliced
  • 1 chilli finely sliced
  • 2 cloves garlic finely sliced or crushed
  • 1 can of coconut milk
  • 1 tsp ground coriander
  • 1tsp ground cumin
  • 1 can brown lentils drained and washed
  • 1-2tbsp soya/tamari sauce

Put all ingredients in a pan, bring to boil and then simmer for 15-20 minutes.

Add fresh spinach, broccoli, edamame beans or any greens for a further few minutes until lightly cooked. Serve with rice, quinoa or rice noodles.

Dress with coriander.
