- 1 sliced onion
- 1 inch ginger finely sliced
- 1 chilli finely sliced
- 2 cloves garlic finely sliced or crushed
- 1 can of coconut milk
- 1 tsp ground coriander
- 1tsp ground cumin
- 1 can brown lentils drained and washed
- 1-2tbsp soya/tamari sauce
Put all ingredients in a pan, bring to boil and then simmer for 15-20 minutes.
Add fresh spinach, broccoli, edamame beans or any greens for a further few minutes until lightly cooked. Serve with rice, quinoa or rice noodles.
Dress with coriander.
